New Orleans chef Andrew Jaeger says that under extreme hardship, his flagship House of Seafood & Jazz is open for business in the recovering French Quarter. Jaeger made the announcement on October 1st from his San Francisco operation, which opened just 30 days before Hurricane Katrina hit. Jaeger has made headlines across the Bay Area with his twist-of-fate story. And, as an internationally-known chef, he has assisted in raising hundreds of thousands of dollars for numerous Katrina fundraisers in San Francisco, with many more planned.
Determined to keep the New Orleans location alive and his staff employed, the skeletal management team has been cleaning up the aftermath of Katrina and preparing for tonight's re-opening over the last two weeks.
"There won't be any tablecloths and the menu will be mostly sandwiches, what we call 'Blue Plate Specials' in New Orleans, and a few Cajun items," said Jaeger. "But, we've got a two-piece band who will fill Decatur Street with sweet New Orleans jazz for the first time since the hurricane."
Jaeger has been in touch with his New Orleans staff daily. They are displaced across Texas, Alabama, Mississippi and Florida. He wants to bring each one of them back to at least partial employment at the New Orleans operation. A half-dozen came with him to San Francisco.
"I consider myself blessed to have been in San Francisco when this thing hit," Jaeger noted. "If I had been in New Orleans, I would have been unable to communicate with my family and staff, and unable to have helped raise money at these wonderful fundraisers."
Jaeger praised the managers who completed the horrendous task of cleaning debris from the restaurant and nightclub.
"We're trying to make the best of a very difficult situation," Jaeger explained with rugged determination. "We've had enough sadness, it's time to throw a real New Orleans party now."
As of the first of October that New Orleans spirit has come alive again at the House of Seafood & Jazz on Decatur Street.
